Ingredients: 1 1/2 pounds of Italian tomatoes, peeled and seeded (substitute any type of tomato) 1 small red onion, diced finely 3 tablespoons of white balsamic vinegar (or red wine vinegar) 3 tablespoons of extra virgin olive oil 1 tablespoon of Dijon mustard 1 clove of garlic, minced 1 teaspoon of sugar salt and pepper to taste 1/2 cup of chopped fresh basil leaves Directions: 1. In a large bowl, combine the tomatoes, onion, vinegar, oil, Dijon mustard, garlic, sugar, salt and pepper. Mix well. 2. Add the basil leaves and stir to combine. 3. Cover the bowl and refrigerate for at least 1 hour before serving. 4. Serve chilled or at room temperature. Enjoy!
