1/3 cup olive oil 1/3 cup red wine vinegar 1 tablespoon Dijon mustard salt and pepper, to taste 2 cloves garlic, minced 1/2 teaspoon dried oregano 4 cups chopped tomatoes (I like to use a variety of colors) 1/4 cup chopped fresh parsley leaves Instructions: 1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt and pepper, to taste. Stir in garlic and oregano until well combined. 2. In a large bowl, combine chopped tomatoes and parsley. Pour the dressing over top and toss until everything is coated. Serve immediately or store in the fridge for later. Enjoy!
